Some dulcimers have 3. Any who boxing rings are more like ukuleles than basses.

I've never seen a mountain dulcimer with three strings. I'm sure they exist but it's unusual. They generally have two courses of one string and one course of two.

Balalaika and cigar box guitar are your best bets.
