Apparently they went bankrupt and their brand name is slapped across supermarket meat now with a sleeker logo design. Kinda odd, since I remember the original store was kinda rough looking.
I worked in the meat packing district in the West Loop in Chicago for a couple years. There was this one place there where you go in and there were just bins of meat, unwrapped, and you put on plastic gloves and just picked the meat yourself. It was so vile. I remember standing there watching this severe and angry looking black lady throwing the meat around looking for an ideal piece, thus bruising and damaging the meat further.
I like a clean butcher. I don't care if its 20% less at the giant vat o' meat clearance places. It's so gross. And the smell. Ugh. Raw, vaguely turned mixed meat with a hint of bleach.
I've always loved the ubiquitous butcher craft of forming pigs out of their bulk breakfast sausage meat, with apples in their mouths. I've seen that at about five different places.
